Swiss Chicken Casserole Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts (or 6-8 chicken thighs)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded Swiss cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • Salt and pepper, to taste

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare Chicken:
    Season the chicken breasts with salt, pepper, and garlic powder.
    Place the chicken breasts in the prepared baking dish. (You can also use cooked, shredded chicken for a quicker version.)
  3. Make the Casserole Sauce:
    In a medium bowl, mix together the cream of chicken soup and sour cream.
    Spread the mixture evenly over the chicken breasts.
  4. Add Cheese:
    Sprinkle the shredded Swiss cheese over the soup mixture, spreading it evenly to cover the chicken.
  5. Prepare the Topping:
    In a small bowl, combine the crushed crackers, melted butter, and dried parsley.
    Stir until the crackers are well coated and then sprinkle the mixture evenly over the top of the casserole.
  6. Bake the Casserole:
    Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the topping is golden brown and crispy.
  7. Serve:
    Let the casserole rest a few minutes before serving. Serve with a side of vegetables or over rice or mashed potatoes.
