
Spinach and Cheese Puff Pastry Pockets

Ingredients:
For the Filling:
- 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
- ½ cup ricotta cheese
- ½ cup feta cheese, crumbled
- ¼ cup grated Parmesan cheese
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp nutmeg (optional)
- 1 egg (for filling, optional)
For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
Instructions:
- Prepare the Filling:
- In a skillet over medium heat, cook the spinach until wilted (skip this step if using frozen spinach).
- Let it cool, then squeeze out excess water and chop finely.
- In a bowl, mix spinach with ricotta, feta, Parmesan, garlic, salt, pepper, and nutmeg. Stir in 1 beaten egg if using (for a richer filling).
- Prepare the Pastry:
- Preheat oven to 400°F (200°C).
- Roll out the puff pastry and cut into 6 equal squares.
- Spoon 1–2 tbsp of the spinach-cheese filling onto the center of each square.
- Fold the pastry into a triangle or rectangle and press the edges with a fork to seal.
- Bake:
- Place the pockets on a lined baking sheet.
- Brush with beaten egg for a golden finish.
- Bake for 18–20 minutes, or until golden brown and puffy.
- Serve & Enjoy!
- Best served warm with a side of marinara, tzatziki, or yogurt dip.
