German Potato Pancakes (Kartoffelpuffer) Recipe

Ingredients:

  • 4 medium potatoes (Russet or Yukon Gold)
  • 1 small onion, finely grated
  • 2 eggs
  • ¼ cup (30g) all-purpose flour
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp nutmeg (optional, for extra flavor)
  • Oil for frying (vegetable or canola)

Instructions:

  1. Prepare the Potatoes: Peel and grate the potatoes using a box grater or food processor. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Mix Ingredients: In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, pepper, and nutmeg (if using). Mix well.
  3. Heat the Oil: In a large skillet, heat about ¼ inch of oil over medium-high heat until shimmering.
  4. Form and Fry the Pancakes: Scoop about ¼ cup of the potato mixture and flatten it into a pancake shape. Carefully place it in the hot oil. Fry for about 3–4 minutes per side or until golden brown and crispy.
  5. Drain and Serve: Remove the pancakes and place them on a paper towel-lined plate to absorb excess oil.
  6. Enjoy! Serve warm with applesauce, sour cream, or fresh herbs.
