Biscoff Ice Cream Sandwiches Recipe

Ingredients:

For the Biscoff Cookie Base:

  • 1 ½ cups Biscoff cookie crumbs (about 15-18 cookies, crushed)
  • ½ cup all-purpose flour
  • 1/3 cup unsalted butter, softened
  • 1/3 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp baking soda

For the Ice Cream Filling:

  • 2 cups vanilla ice cream (or any flavor of your choice)
  • ¼ cup Biscoff spread (optional, for extra flavor)

Instructions:

  1. Prepare the Cookie Dough:
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a medium bowl, mix the Biscoff cookie crumbs, flour, salt, and baking soda.
    • In a separate large bowl, beat together the softened butter and brown sugar until creamy.
    • Add the egg and vanilla extract and continue mixing until well combined.
    • Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  2. Shape the Cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls.
    • Place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Flatten each dough ball slightly with your fingers or a fork to form cookie shapes.
    • Bake for 8-10 minutes or until the edges are lightly golden.
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  3. Assemble the Ice Cream Sandwiches:
    • Once the cookies have cooled, take one cookie and spread a generous scoop of vanilla ice cream (or your preferred flavor) on the flat side.
    • Top with another cookie, pressing down gently to sandwich the ice cream in between.
    • If desired, you can drizzle a little Biscoff spread between the cookies for an extra layer of flavor.
  4. Freeze the Sandwiches:
    • Place the assembled ice cream sandwiches on a baking sheet or tray lined with parchment paper.
    • Freeze the sandwiches for 2-4 hours or until the ice cream is firm and set.
