Apple Pie Biscuits Recipe

Ingredients:

Ingredients for Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ cup unsalted butter, cold and cubed
  • ¾ cup buttermilk (or whole milk)
  • 1 tbsp granulated sugar (optional)

For the Apple Pie Filling:

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
  • 2 tbsp unsalted butter
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tsp cornstarch + 1 tbsp water (slurry, for thickening)

For the Topping:

  • 2 tbsp melted butter
  • 1 tbsp cinnamon sugar (mix of 1 tbsp sugar + ½ tsp cinnamon)
  • Optional: Caramel drizzle or powdered sugar glaze

Instructions:

  1. Prepare the Apple Pie Filling:
    • In a saucepan over medium heat, melt 2 tbsp butter and add the diced apples.
    • Stir in brown sugar, cinnamon, and vanilla extract.
    • Cook for 5-7 minutes, until apples are tender.
    • Add the cornstarch slurry, cook for another 1-2 minutes, until the mixture thickens. Remove from heat and let cool slightly.
  2. Make the Biscuits:
    • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • In a large bowl, whisk together flour, baking powder, salt, and sugar (if using).
    • Cut in cold butter using a pastry cutter or hands until the mixture resembles coarse crumbs.
    • Gradually add buttermilk, stirring until a dough forms (do not overmix).
  3. Assemble the Apple Pie Biscuits:
    • Lightly flour a surface and roll out the dough to about ½-inch thick.
    • Cut into circles (or squares) using a biscuit cutter or knife.
    • Place a spoonful of apple pie filling in the center of half the biscuit rounds.
    • Top with another biscuit round and pinch the edges to seal.
    • Place biscuits on the baking sheet and brush the tops with melted butter.
  4. Bake the Biscuits:
    • Bake for 18-22 minutes, until golden brown.
    • Remove from oven and immediately brush with more melted butter, then sprinkle with cinnamon sugar.
  5. Serve & Enjoy!
    • Enjoy warm as is or drizzle with caramel or a powdered sugar glaze for extra sweetness!
