
Apple Pie Biscuits Recipe

Ingredients:
Ingredients for Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ¼ cup unsalted butter, cold and cubed
- ¾ cup buttermilk (or whole milk)
- 1 tbsp granulated sugar (optional)
For the Apple Pie Filling:
- 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
- 2 tbsp unsalted butter
- ¼ cup brown sugar
- 1 tsp cinnamon
- ½ tsp vanilla extract
- 1 tsp cornstarch + 1 tbsp water (slurry, for thickening)
For the Topping:
- 2 tbsp melted butter
- 1 tbsp cinnamon sugar (mix of 1 tbsp sugar + ½ tsp cinnamon)
- Optional: Caramel drizzle or powdered sugar glaze
Instructions:
- Prepare the Apple Pie Filling:
- In a saucepan over medium heat, melt 2 tbsp butter and add the diced apples.
- Stir in brown sugar, cinnamon, and vanilla extract.
- Cook for 5-7 minutes, until apples are tender.
- Add the cornstarch slurry, cook for another 1-2 minutes, until the mixture thickens. Remove from heat and let cool slightly.
- Make the Biscuits:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and sugar (if using).
- Cut in cold butter using a pastry cutter or hands until the mixture resembles coarse crumbs.
- Gradually add buttermilk, stirring until a dough forms (do not overmix).
- Assemble the Apple Pie Biscuits:
- Lightly flour a surface and roll out the dough to about ½-inch thick.
- Cut into circles (or squares) using a biscuit cutter or knife.
- Place a spoonful of apple pie filling in the center of half the biscuit rounds.
- Top with another biscuit round and pinch the edges to seal.
- Place biscuits on the baking sheet and brush the tops with melted butter.
- Bake the Biscuits:
- Bake for 18-22 minutes, until golden brown.
- Remove from oven and immediately brush with more melted butter, then sprinkle with cinnamon sugar.
