  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (8 oz) block cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne (optional, for heat)
  • 1 (15 oz) can black beans, drained and rinsed (optional)
  • 1 (4 oz) can diced green chilies (optional)
  • Chopped fresh cilantro or green onions for garnish
  • Tortilla chips, crackers, or veggies for dipping

Instructions:

  1. Cook the Beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain excess grease if needed.
