Taco Ranch Bites

Makes: 12 bites

Ingredients:

  • 1 lb ground beef or turkey
  • 1 tbsp taco seasoning
  • 2 tbsp ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 can (8-count) refrigerated biscuit dough (or crescent roll dough)
  • ¼ cup sour cream (for topping)
  • ¼ cup diced tomatoes (for topping)
  • 2 tbsp chopped cilantro (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Cook the meat: In a skillet over medium heat, cook ground beef until browned. Drain excess grease, then stir in taco seasoning and ranch dressing. Remove from heat.
  3. Prepare the dough: Flatten each biscuit and press into the muffin tin cups, forming little shells.
  4. Fill & Bake: Spoon the taco mixture into each dough cup and sprinkle with cheese. Bake for 12-15 minutes or until golden brown.
  5. Garnish & Serve: Let cool slightly, then top with sour cream, diced tomatoes, and cilantro. Enjoy!
