Creamy Sweet Corn and Basil Soup
This vibrant and flavorful soup is a celebration of summer’s bounty! Fresh sweet corn and fragrant basil come together in a creamy, comforting bowl that’s perfect for a light lunch or a simple supper.
Yields: 4 servings Prep time: 15 minutes Cook time: 30 minutes
Ingredients:
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh corn kernels (from about 4 ears of corn)
- 4 cups vegetable broth
- 1 cup heavy cream
- ½ cup fresh basil leaves, roughly chopped
- Salt and pepper to taste
Instructions:
- Sauté the aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Add the corn and broth: Stir in the corn kernels and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes, or until the corn is tender.
- Blend the soup: Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth. For a chunkier soup: blend only half of the soup for a partially pureed texture.
- Stir in the cream and basil: Return the blended soup to the pot. Stir in the heavy cream and chopped basil. Season with salt and pepper to taste.
- Simmer and serve: Gently heat the soup through for a few minutes. Do not boil. Ladle into bowls and garnish with additional fresh basil leaves, if desired.
Tips & Variations:
- Fresh corn is key: Use fresh corn kernels for the best flavor and sweetness. If fresh corn isn’t available, you can substitute frozen corn.
- Adjust the consistency: Add more broth or cream to achieve your desired consistency.
- Spice it up: Add a pinch of red pepper flakes for a touch of heat.
- Make it vegan: Substitute the heavy cream with coconut cream or full-fat coconut milk for a vegan version.
- Garnish with: A drizzle of olive oil, a sprinkle of Parmesan cheese, or a dollop of crème fraîche.
