Ingredients:

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh corn kernels (from about 4 ears of corn)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • ½ cup fresh basil leaves, roughly chopped
  • Salt and pepper to taste

Instructions:

  1. Sauté the aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
