Ingredients:
For the Filling:
- 6 cups fresh or canned peach slices (drained if canned)
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- 2 teaspoons vanilla extract
- 2 tablespoons cornstarch
- ½ cup water (or peach juice)
- 2 tablespoons butter, melted
For the Crust:
- 3 store-bought pie crusts (or homemade)
- 2 tablespoons butter, melted (for brushing)
- 1 tablespoon sugar (for sprinkling)
Instructions:
1. Preheat & Prep
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
2. Prepare the Peach Filling
- In a large saucepan, mix sugar, brown sugar, cinnamon, nutmeg, cornstarch, and water.
- Heat over medium, stirring until thickened (about 5 minutes).
- Add peaches & vanilla extract, then stir gently. Remove from heat.
3. Assemble the Cobbler
- Roll out one pie crust and place it at the bottom of the dish.
- Pour half of the peach mixture over the crust.
- Add the second crust, then the remaining peaches.
- Top with the third crust, crimping the edges for a rustic look.
4. Bake Until Golden
- Brush the top crust with melted butter and sprinkle with sugar.
- Bake for 40-45 minutes, or until golden brown and bubbly.
- Let it cool slightly before serving.
