These crispy, golden potato bombs are stuffed with gooey cheese, fried to perfection, and coated in garlic butter for an irresistible bite! Perfect for appetizers, snacks, or party food.

Ingredients:

For the Potato Bombs:

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional, for extra flavor)
  • 1 egg, beaten
  • ½ cup all-purpose flour (for coating)
  • 1 cup breadcrumbs (panko for extra crispiness)
  • Oil for frying

For the Garlic Butter:

  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

Instructions:

1. Make the Potato Mixture

  1. In a bowl, mix mashed potatoes, garlic powder, salt, pepper, paprika, and Parmesan.
  2. Take 1 tablespoon of potato mixture, flatten it, and place a cube of cheese in the center.
  3. Wrap the potato around the cheese and roll it into a ball. Repeat for all.

2. Coat the Potato Bombs

  1. Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.
  2. Place on a tray and chill in the fridge for 10-15 minutes to help them hold their shape.

3. Fry Until Crispy

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Fry the potato bombs in batches until golden brown and crispy (about 3-4 minutes).
  3. Drain on a paper towel.

4. Make the Garlic Butter & Serve

  1. Mix melted butter, minced garlic, and parsley.
  2. Drizzle over the crispy potato bombs or toss them in the garlic butter for extra flavor!
  3. Serve hot with ranch, marinara, or sour cream dip.
