Ingredients:
For the Potato Bombs:
- 2 cups mashed potatoes (cooled)
- 1 cup shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika (optional, for extra flavor)
- 1 egg, beaten
- ½ cup all-purpose flour (for coating)
- 1 cup breadcrumbs (panko for extra crispiness)
- Oil for frying
For the Garlic Butter:
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
Instructions:
1. Make the Potato Mixture
- In a bowl, mix mashed potatoes, garlic powder, salt, pepper, paprika, and Parmesan.
- Take 1 tablespoon of potato mixture, flatten it, and place a cube of cheese in the center.
- Wrap the potato around the cheese and roll it into a ball. Repeat for all.
2. Coat the Potato Bombs
- Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.
- Place on a tray and chill in the fridge for 10-15 minutes to help them hold their shape.
3. Fry Until Crispy
- Heat oil in a deep pan to 350°F (175°C).
- Fry the potato bombs in batches until golden brown and crispy (about 3-4 minutes).
- Drain on a paper towel.
4. Make the Garlic Butter & Serve
- Mix melted butter, minced garlic, and parsley.
- Drizzle over the crispy potato bombs or toss them in the garlic butter for extra flavor!
- Serve hot with ranch, marinara, or sour cream dip.
