Cheesy Mashed Potato Puffs
These crispy, cheesy, golden-brown potato puffs are the perfect way to use leftover mashed potatoes! They’re light, fluffy on the inside, and packed with melty cheese.

Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- ½ cup shredded cheddar cheese (or your favorite cheese)
- ÂĽ cup grated Parmesan cheese
- ÂĽ cup milk
- ÂĽ cup chopped green onions or chives
- ÂĽ cup all-purpose flour
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ÂĽ teaspoon black pepper
- ½ teaspoon baking powder
- Butter or nonstick spray (for greasing the pan)
Instructions:
1. Preheat & Prep
Preheat oven to 400°F (200°C). Lightly grease a muffin tin with butter or nonstick spray.
2. Mix the Ingredients
In a large bowl, combine:

âś… Cheddar & Parmesan cheese
âś… Milk, flour, and baking powder
âś… Garlic powder, salt, and pepper
âś… Green onions
Mix everything well until smooth.
3. Fill the Muffin Tin
Spoon the mixture into the muffin tin, filling each cup about Âľ full.
4. Bake Until Golden
Bake for 20-25 minutes, or until the tops are golden brown and crispy.
5. Serve & Enjoy!
Let them cool for a few minutes, then carefully remove from the muffin tin. Serve warm with sour cream, ranch, or hot sauce.
