These crispy, golden-brown scored potatoes are simple yet incredibly flavorful. Scoring the potatoes allows the seasoning and butter to soak in, creating the perfect balance of crispy edges and a soft, fluffy center.

Ingredients:

  • 4 large Yukon Gold or Russet potatoes
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (for color & mild spice)
  • ½ teaspoon dried thyme (or rosemary)
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions:

1. Preheat Oven & Prep the Potatoes

  1. Preheat oven to 425°F (220°C).
  2. Wash and cut potatoes in half lengthwise.
  3. Use a sharp knife to score the cut side in a crisscross pattern (don’t cut all the way through).

2. Season the Potatoes

  1. In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, paprika, and thyme.
  2. Brush the cut, scored side of the potatoes generously with the mixture.

3. Bake Until Crispy & Golden

  1. Place the potatoes scored-side down on a lined sheet pan.
  2. Roast for 30-35 minutes until the bottoms are crispy and golden brown.
  3. Flip the potatoes, sprinkle with Parmesan (if using), and bake for another 5 minutes.

4. Serve & Enjoy

  1. Garnish with fresh parsley.
  2. Serve with sour cream, ranch, or your favorite dip!
