These crispy, golden-brown scored potatoes are simple yet incredibly flavorful. Scoring the potatoes allows the seasoning and butter to soak in, creating the perfect balance of crispy edges and a soft, fluffy center.

Ingredients:
- 4 large Yukon Gold or Russet potatoes
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (for color & mild spice)
- ½ teaspoon dried thyme (or rosemary)
- ¼ cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions:
1. Preheat Oven & Prep the Potatoes
- Preheat oven to 425°F (220°C).
- Wash and cut potatoes in half lengthwise.
- Use a sharp knife to score the cut side in a crisscross pattern (don’t cut all the way through).
2. Season the Potatoes
- In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, paprika, and thyme.
- Brush the cut, scored side of the potatoes generously with the mixture.
3. Bake Until Crispy & Golden
- Place the potatoes scored-side down on a lined sheet pan.
- Roast for 30-35 minutes until the bottoms are crispy and golden brown.
- Flip the potatoes, sprinkle with Parmesan (if using), and bake for another 5 minutes.
4. Serve & Enjoy
- Garnish with fresh parsley.
- Serve with sour cream, ranch, or your favorite dip!
