Grilled Short Ribs with Greek-Style Chimichurri

This recipe combines tender, smoky grilled short ribs with a vibrant, herb-packed Greek-style chimichurri. Perfect for summer grilling!

Ingredients

For the Short Ribs:

  • 2 lbs beef short ribs, flanken-cut (about ½-inch thick)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper

For the Greek-Style Chimichurri:

  • ½ cup fresh parsley, finely chopped
  • ¼ cup fresh oregano, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • Salt & black pepper to taste

Instructions

1. Marinate the Short Ribs

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
  2. Rub the marinade all over the short ribs, ensuring they’re well-coated.
  3. Cover and refrigerate for at least 1 hour (or up to 12 hours for deeper flavor).

2. Make the Greek-Style Chimichurri

  1. In a bowl, mix together parsley, oregano, mint, olive oil, red wine vinegar, lemon juice, garlic, and red pepper flakes.
  2. Season with salt and black pepper to taste.
  3. Let it sit for at least 15 minutes to develop flavors.

3. Grill the Short Ribs

  1. Preheat the grill to high heat (about 450°F/230°C).
  2. Grill the short ribs for 3-5 minutes per side, or until they have a nice char and reach desired doneness.
  3. Remove from the grill and let rest for 5 minutes.

4. Serve

  • Drizzle the Greek-style chimichurri over the grilled short ribs.
  • Serve with grilled pita bread, a fresh Greek salad, or roasted potatoes.

Tips & Variations:

✔ No Grill? Sear the ribs in a hot cast-iron skillet for 3-4 minutes per side, then finish in a 400°F oven for 5-7 minutes.
