Grilled Short Ribs with Greek-Style Chimichurri
This recipe combines tender, smoky grilled short ribs with a vibrant, herb-packed Greek-style chimichurri. Perfect for summer grilling!

Ingredients
For the Short Ribs:
- 2 lbs beef short ribs, flanken-cut (about ½-inch thick)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp salt
- ½ tsp black pepper
For the Greek-Style Chimichurri:
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh oregano, finely chopped
- 2 tbsp fresh mint, finely chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- ¼ tsp red pepper flakes (optional)
- Salt & black pepper to taste
Instructions
1. Marinate the Short Ribs
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
- Rub the marinade all over the short ribs, ensuring they’re well-coated.
- Cover and refrigerate for at least 1 hour (or up to 12 hours for deeper flavor).
2. Make the Greek-Style Chimichurri
- In a bowl, mix together parsley, oregano, mint, olive oil, red wine vinegar, lemon juice, garlic, and red pepper flakes.
- Season with salt and black pepper to taste.
- Let it sit for at least 15 minutes to develop flavors.
3. Grill the Short Ribs
- Preheat the grill to high heat (about 450°F/230°C).
- Grill the short ribs for 3-5 minutes per side, or until they have a nice char and reach desired doneness.
- Remove from the grill and let rest for 5 minutes.
4. Serve
- Drizzle the Greek-style chimichurri over the grilled short ribs.
- Serve with grilled pita bread, a fresh Greek salad, or roasted potatoes.
