Cowboy Stew

A hearty, flavorful stew packed with meat, beans, and vegetables—perfect for a comforting meal!

Ingredients:

  • 1 lb (450g) ground beef
  • ½ lb (225g) smoked sausage, sliced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) corn, drained
  • 2 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cups beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

1. Cook the Meat

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the sliced smoked sausage and cook for 2 minutes until slightly browned.

2. Add Vegetables & Seasoning

  1. Stir in the chopped onion and cook until softened.
  2. Add the diced tomatoes, pinto beans, corn, and potatoes.
  3. Pour in the beef broth and stir in smoked paprika, chili powder, garlic powder, salt, and pepper.

3. Simmer the Stew

  1. Bring the stew to a boil, then reduce the heat and let it simmer for 30-35 minutes or until the potatoes are tender.
  2. Stir occasionally and add more broth if needed.

4. Serve & Enjoy

  1. Ladle the stew into bowls and serve hot with cornbread or crusty bread.

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Freezes well for up to 3 months.
