Cowboy Stew
A hearty, flavorful stew packed with meat, beans, and vegetables—perfect for a comforting meal!

Ingredients:
- 1 lb (450g) ground beef
- ½ lb (225g) smoked sausage, sliced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) pinto beans, drained
- 1 can (15 oz) corn, drained
- 2 medium potatoes, diced
- 1 small onion, chopped
- 2 cups beef broth
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Cook the Meat
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the sliced smoked sausage and cook for 2 minutes until slightly browned.
2. Add Vegetables & Seasoning
- Stir in the chopped onion and cook until softened.
- Add the diced tomatoes, pinto beans, corn, and potatoes.
- Pour in the beef broth and stir in smoked paprika, chili powder, garlic powder, salt, and pepper.
3. Simmer the Stew
- Bring the stew to a boil, then reduce the heat and let it simmer for 30-35 minutes or until the potatoes are tender.
- Stir occasionally and add more broth if needed.
4. Serve & Enjoy
- Ladle the stew into bowls and serve hot with cornbread or crusty bread.
