Air Fryer Tea Loaf

A moist and flavorful tea loaf, packed with dried fruits and subtle spices, made effortlessly in the air fryer!

Prep Time: 15 minutes

Cook Time: 40-45 minutes

Total Time: 1 hour

Ingredients:

  • 1 cup (150g) mixed dried fruits (raisins, sultanas, currants)
  • 1 cup (240ml) hot tea (black tea works best)
  • 1 ½ cups (190g) self-rising flour
  • ½ cup (100g) brown sugar
  • 1 teaspoon cinnamon (optional)
  • 1 large egg
  • 1 tablespoon honey or golden syrup

Instructions:

1. Soak the Fruits

  1. Place the dried fruits in a bowl and pour over the hot tea. Let them soak for at least 30 minutes or until plump. Drain excess liquid if necessary.

2. Prepare the Batter

  1. In a mixing bowl, combine self-rising flour, brown sugar, and cinnamon.
  2. Add the soaked fruits, beaten egg, and honey. Mix until well combined.

3. Air Fry the Loaf

  1. Preheat the air fryer to 320°F (160°C).
  2. Grease and line a small loaf tin that fits in your air fryer.
  3. Pour the batter into the tin and smooth the top.
  4. Air fry for 40-45 minutes, or until a skewer inserted in the center comes out clean.

4. Cool & Serve

  1. Let the loaf cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and enjoy with butter or jam!

Storage Tips:

  • Store in an airtight container at room temperature for up to 4 days.
  • Freezes well for up to 3 months.
