Sausage and Mash with Onion Gravy

A comforting classic featuring juicy sausages, creamy mashed potatoes, and rich onion gravy.

Ingredients:

For the Sausages & Mash:

  • 6 pork sausages
  • 1 tablespoon oil
  • 4 large potatoes, peeled and chopped
  • ¼ cup (60ml) milk
  • 2 tablespoons butter
  • Salt and pepper to taste

For the Onion Gravy:

  • 1 large onion, thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup (240ml) beef stock
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions:

1. Cook the Sausages:

  1. Heat oil in a pan over medium heat.
  2. Add the sausages and cook for 12-15 minutes, turning occasionally until browned and cooked through.

2. Make the Mashed Potatoes:

  1. Boil potatoes in salted water for 15 minutes or until fork-tender.
  2. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.

3. Prepare the Onion Gravy:

  1. In a pan, melt butter over medium heat and cook the onions until soft and caramelized (about 8 minutes).
  2. Stir in flour and cook for 1 minute.
  3. Gradually add beef stock, stirring constantly, then add Worcestershire sauce. Simmer for 5 minutes until thickened.

4. Serve & Enjoy:

  • Plate the mashed potatoes, top with sausages, and pour over the onion gravy.

Tips:

  • Use beef or chicken sausages for variety.
  • For extra creamy mash, add a splash of double cream.
