Pork Chop and Sauerkraut Casserole Recipe

Prep Time: 15 minutes
Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes
Servings: 4-6

Ingredients:

  • 4 bone-in or boneless pork chops
  • 1 can (14.5 oz) sauerkraut, drained and rinsed
  • 1 large onion, sliced
  • 2 medium potatoes, peeled and thinly sliced
  • 1 cup chicken broth
  • 1 tbsp olive oil or vegetable oil
  • 1 tsp caraway seeds (optional, for authentic flavor)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions:

  1. Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare Pork Chops:
Season the pork chops with salt, pepper, garlic powder, and paprika.
In a large skillet, heat the olive oil over medium-high heat. Brown the pork chops on both sides for about 2-3 minutes per side. Remove and set aside.
  3. Layer the Casserole:
In the prepared baking dish, layer the sliced potatoes on the bottom.
Spread the sauerkraut over the potatoes, followed by the sliced onions.
  4. Add Pork Chops:
Place the browned pork chops on top of the sauerkraut and onions.
  5. Add Broth and Seasoning:
Pour the chicken broth over the casserole, and sprinkle the caraway seeds (if using) on top for added flavor.
  6. Bake the Casserole:
Cover the casserole with foil and bake for 1 hour.
After 1 hour, remove the foil and bake for an additional 15-20 minutes, or until the pork is tender and cooked through (internal temperature of 145°F).
  7. Optional Cheesy Topping:
In the last 5 minutes of baking, sprinkle shredded cheddar cheese over the top of the casserole, then return to the oven to melt the cheese.
  8. Serve:
Let the casserole rest for 5-10 minutes before serving. Serve with a side of crusty bread or salad.
