
Old-Fashioned Amish Beef and Potato Casserole Recipe

Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and thinly sliced
- 1 cup shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- ½ cup milk
- 1 tsp dried parsley
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp butter
- 1 tbsp olive oil (for cooking the beef)
Instructions:
- Preheat Oven:
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray. - Cook the Ground Beef:
In a large skillet, heat the olive oil over medium heat. Add the ground beef, chopped onion, and minced garlic. Cook beef and onion until browned and soft, 7-10 minutes. Drain fat if necessary. - Prepare the Casserole Base:
In a bowl, combine the cream of mushroom soup, sour cream, milk, dried parsley, salt, and black pepper. Mix well. - Assemble the Casserole:
Layer the sliced potatoes in the bottom of the prepared baking dish.
Spread the cooked beef mixture evenly over the potatoes.
Pour the sour cream mixture over the beef and potatoes, spreading it out evenly. - Top with Cheese:
Sprinkle the shredded cheddar cheese evenly over the casserole. - Bake the Casserole:
Cover the casserole with foil and bake for 45 minutes.
Uncover the dish and bake for another 15 minutes, or until the potatoes yield to a fork’s gentle pressure and the cheese forms a molten, bubbly top. - Serve:
Let the casserole cool for a few minutes before serving.
