Spinach and Cheese Puff Pastry Pockets

Ingredients:

For the Filling:

  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • ½ cup ricotta cheese
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg (optional)
  • 1 egg (for filling, optional)

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)

Instructions:

  1. Prepare the Filling:
    • In a skillet over medium heat, cook the spinach until wilted (skip this step if using frozen spinach).
    • Let it cool, then squeeze out excess water and chop finely.
    • In a bowl, mix spinach with ricotta, feta, Parmesan, garlic, salt, pepper, and nutmeg. Stir in 1 beaten egg if using (for a richer filling).
  2. Prepare the Pastry:
    • Preheat oven to 400°F (200°C).
    • Roll out the puff pastry and cut into 6 equal squares.
    • Spoon 1–2 tbsp of the spinach-cheese filling onto the center of each square.
    • Fold the pastry into a triangle or rectangle and press the edges with a fork to seal.
  3. Bake:
    • Place the pockets on a lined baking sheet.
    • Brush with beaten egg for a golden finish.
    • Bake for 18–20 minutes, or until golden brown and puffy.
  4. Serve & Enjoy!
    • Best served warm with a side of marinara, tzatziki, or yogurt dip.
