Ingredients:

  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken (rotisserie works great!)
  • 1 cup heavy cream
  • 1 (8 oz) block cream cheese, softened
  • 1 packet ranch seasoning mix (or 3 tbsp homemade)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup chopped cooked bacon (plus extra for garnish)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 1 ½ cups baby spinach or chopped kale (optional, for a nutritious twist)
  • 2 tablespoons butter
  • 1 cup diced celery & carrots (optional, for extra texture)

Instructions:

1. Sauté the Veggies (Optional)

  • In a large pot, melt butter over medium heat.
  • Throw in the celery and carrots, giving them about 5 minutes to soften up.

2. Make the Creamy Base

  • Pour in chicken broth and bring to a simmer.
  • Gently heat the soup over low heat. Whisk the cream cheese into the soup a little at a time, ensuring it is completely melted and the soup is smooth.

3. Add the Chicken & Seasonings

  • Stir in shredded chicken, ranch seasoning, garlic powder, onion powder, paprika, and black pepper.

4. Make it Extra Cheesy

  • The addition of heavy cream and melted cheddar cheese creates a luxuriously creamy texture.

5. Add the Bacon & Greens (Optional)

  • Stir in bacon and any greens.
